New Jersey Oyster Pie

Preparation time: 15 minutes Cook time: 30 minutes
Yield: One 9-inch pie

Ingredients:
3 slices thick bacon
1 tablespoon canola oil
2 tablespoons all-purpose flour (not self-rising)
3/4 cup milk
18 oysters, shucked and drained; reserve the liquid
1 teaspoon Worcestershire sauce
1/2 teaspoon Cajun seasoning
2 unbaked 9-inch pie crusts



Instructions:
1. Preheat the oven to 350 degrees.
2. In a skillet, cook the bacon until browned; drain,
keeping 1 tablespoon of the drippings. Crumble the
bacon and set aside.
3. In the same pan, combine the canola oil with the
bacon grease; stir in the flour and cook until light
brown. Slowly whisk in the milk and oyster liquid.
Cook, stirring, until thick gravy (roux) has formed.
Be sure to get the roux thick enough or the pie will
not set correctly.
4. Stir the remaining ingredients into the roux, including
the oysters. Pour the filling into a pie shell and cover
with the remaining crust.
5. Bake for 30 minutes or until the crust is golden
brown.
