Citrus Pound Cake

                                                     Lime, grapefruit and orange!

Preparation time: 20 minutes Cook time: 40 minutes
Yield: One 10-inch cake

Ingredients:
1/2 cup milk
3 teaspoons each: grapefruit, lime and orange zest
1 tablespoon grapefruit juice
1 1/2 cups sugar
1 1/4 cups butter, softened (do not use margarine)
3 eggs
1 teaspoon vanilla
2 1/4 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
For the glaze:
2 tablespoons melted butter, additional
2 tablespoons orange juice
1 cup powdered sugar (or as needed to thicken glaze)


Instructions:
1. Preheat the oven to 350 degrees. Grease and flour a
10-inch tube pan; set aside.
2. In a bowl, combine the milk with 2 teaspoons of each
citrus zest; reserve the rest of the zest to use as a
topping for the finished cake.
3. In a large bowl, combine the sugar with 1 1/4 cups of
the butter; beat with a mixer on medium until fluffy
and light. Add the eggs, one at a time, beating after
each one. Stir the vanilla into the mix by hand.
4. In another bowl, whisk all the dry ingredients
together. Add 1/3 each of the flour and milk mixture
to the mixing bowl alternately, beating only until
moist after each third. Stir well by hand a few times
to make sure there is no dry mixture left in the batter.
5. Pour into the prepared pan. Bake for 40 minutes or
until a tester comes out clean. Cool in the pan for 10
minutes, remove from the pan, glaze and sprinkle the
remaining zest over the top. Cool the cake completely
on a wire rack.
6. Make the glaze: Combine all the ingredients together
with a whisk until of a spreading consistency, add
more sugar as needed.
