Ingredients:
2 lbs beef flank, sliced
1 onion
1 carrot, shredded
2 bell peppers (one green, the other red or yellow)
1 jalapeno
salt and black pepper to taste
other seasoning by your choice (chili powder,
cayenne pepper, cumin etc)
corn tortillas
avocado
salsa sauce
lime juice or fresh lime
Directions:
Finely chop the onion, bell peppers and jalapeno. Mix
them with the seasoning of your choice. Rub the beef with
this mixture. Turn the heat of your crock pot to low and
cook for approximately 8 hours. Once the meat is done,
slice it. Make tacos by putting the meat on tortillas. Top
each taco with salsa sauce, minced or chopped avocado,
shredded carrot and some drops of lime juice.
