Teriyaki Chicken with Pineapple

Ingredients:
1 Tbsp oil
1 pound chicken breasts (skinless)
¼ tsp salt
¼ tsp ground black pepper
1 diced onion
1 diced green capsicum bell pepper
1 diced red capsicum capsicum bell pepper
1 - 1 1/2 Tbsp soy sauce
1/2 tsp ginger, freshly grated
1 cup diced pineapple
1 cup beans, broccoli or cauliflower


Directions:
Chop the chicken into small 1in pieces, seasoning with
salt & pepper. Heat the oil in large frypan. Add chicken
and onions; frying over med-high heat. Cook about 5
minutes. Transfer to the crock pot.
In the same pan add the soy sauce and ginger cooking for 1
minute. Pour the sauce over the chicken, then place the
pineapple, capsicum and vegetables on top. Cook until
chicken is completely cooked through and veggies are
tender. Serve over chopped cos lettuce and rice or potato.
