German Turkey - Covered in bacon - packed with flavor

Preparation time: 25 minutes Cook time: 4 hours Yield:
1 turkey

Ingredients:
1 (18 pound) whole turkey with the giblets removed
1 each: onion and carrot, peeled and cut into eight
pieces
1 stalk celery, cut into three pieces
1 whole apple, stem removed
1 whole orange
1/4 cup vegetable oil
Salt and pepper to taste
1 teaspoon Cajun seasoning
1 pound sliced bacon, smoked is best
1 oven roasting bag large enough for the turkey


Instructions:
1. Preheat the oven to 350 degrees. Rinse the turkey
with cold water inside and out; pat dry and place in a
large roasting pan.
2. With a fork, poke holes in the apple and orange to
release flavor as they cook; stuff them and the rest of
the vegetables into the cavity of the bird. If needed,
cut the items in half.
3. Spread the oil over the outside of the bird; season
with the salt, pepper and Cajun seasoning. Place the
turkey into the roasting bag and return to the pan,
breast up. Cover the entire surface of the bird with
the bacon strips, as pictured. Close the bag.
4. Bake the turkey for 4 hours; check the internal
temperature which should be 180 degrees. If the meat
is not up to temperature, continue cooking in 15
minutes intervals until done. Let the turkey rest in the
roasting pan for about 30 minutes before
